Umami Oil Noodles with Fried Egg and Salad

A quick, flavour-packed, everyday noodle dish where MeiMei Umami Oil does all the work. Fresh, simple, and perfect when you want something delicious in just ten minutes. A well-balanced, no-brainer meal with protein, vegetables, and carbohydrates, everything your body needs.
Serves 2/ 10 minutes
INGREDIENTS
Fresh produce
- 2 eggs
- 2 handfuls of mixed salad greens or grated carrot
Pantry
- 2 portions noodles of your choice (or gluten-free noodles)
- 2 tbsp soy sauce
- 1 tsp sugar
- 1 tbsp water
- Salt and black pepper
MeiMei
- 2 tbsp MeiMei Umami Oil
- (Optional) MeiMei Chilli Oil, for drizzling
METHOD
- Cook the noodles according to the package instructions. Drain well.
- Prepare the dressing by mixing soy sauce, sugar, water, and 2 tbsp MeiMei Umami Oil. Add the hot noodles and toss until evenly coated.
- Fry the eggs in a little umami oil. Cook them runny or firm — just the way you like. Season with salt and black pepper. Turn off the heat and finish with a splash of extra soy sauce for added umami.
- Top the noodles with the fried eggs and salad. Drizzle with MeiMei Chilli Oil to taste.
TIPS
- Adjust the amount of umami oil, chilli oil, and soy sauce to suit your own taste.
- Try other vegetables such as cucumber, bean sprouts, quick-fried cabbage, or edamame.
