Creamy, Nutty Udon Noodles with a Subtle Kick

A firm favourite that often finds its way onto our dinner table at home. Quick, creamy, and full of flavour — ready in just 15 minutes. Perfect alongside our Steamed Cod with Black Bean Magic & Umami Oil (se receptet) or Chicken Salad with Umami Oil (se receptet).

Serves: 2 / 15 minutes

 

INGREDIENTS

Fresh produce

  • 2 garlic cloves, pressed or grated
  • 2 handfuls grated carrot or shredded cucumber
  • 1 handful fresh coriander, roughly chopped

Pantry

  • 2 portions udon noodles, egg noodles, or other noodles
  • 1 dl cashew nuts or other nuts, roughly chopped
  • 1–2 tbsp peanut butter or sesame paste (tahini)
  • 2 tbsp soy sauce
  • ½ tsp honey or sugar
  • 2 tbsp water

MeiMei

  • MeiMei Chilli Oil, to taste
  • MeiMei Umami Oil, to taste


METHOD

  1. Cook the noodles according to the package instructions. Drain well.
  2. Make the dressing: whisk together the peanut butter or sesame paste with soy sauce, water, honey/sugar, and pressed garlic until smooth and creamy.
  3. Toss the dressing with the noodles and carrot/cucumber until everything is evenly coated.
  4. Add MeiMei Umami Oil and/or MeiMei Chilli Oil to taste.
  5. Top with fresh coriander and cashew nuts.

TIPS

  • Perfect alongside Chicken Salad with Umami Oil (se receptet) or Steamed Cod with Black Bean Magic & Umami Oil (se receptet).
  • Adjust the amount of water, peanut butter/sesame paste, garlic, and soy sauce to suit your taste.
